Tomato & Onion Marmalade

• 6 Tomatoes on the Vine

• 4 Large Onions

• Splash Balsamic Vinegar

• ½ Sheet of Puff Pastry

• Lemon Tyme

• 2 tbls Soft Brown Sugar

• 3 tbls Redcurrant Jelly

• Olive Oil

• X 1 Egg


Method


1. Peel and slice the onions and place into a heavy based pot, cook over a medium heat until they start to brown, then add the brown sugar and balsamic vinegar.  Continue to cook until the liquid reduces by half then add the redcurrant jelly.  Continue to cook until the mixture has become sticky and season to taste.

2. Remove from heat and allow to cool.

3. With a small knife mark a 1cm border around the edge of the pastry and brush with the beaten egg

4. Place on a tray & bake in oven until golden

5. Remove from oven and with a small spoon press down the pastry inside the 1cm border until it is flat

6. Place the onion marmalade on to the pastry and spread the mixture up to the borders

7. Slice the tomatoes and place them on top of the onions, sprinkle with the thyme leaves, sea salt, cracked pepper and some olive oil

8. Place into the oven for a further 10 mins to allow the tomatoes to soften

Slice & serve with rocket and parmesan salad






Afternoon Tea


- A choice of sandwiches cut without crusts

- Homemade scone served with strawberry jam & whipped cream


Scone Recipe:

• 225g/8oz Self Raising Flour

• Pinch of Salt

• 55g/2oz Butter

• 25g/1oz Caster Sugar

• 150ml/5fl oz Milk


Method

1. Heat the oven to 220C/425F/Gas 7. Lightly grease a baking sheet.

2. Mix together the flour & salt & rub in the butter.

3. Stir in the sugar & then milk to get a soft dough.

4. Turn on to a floured work surface and knead very lightly. Pat out to a round 2cm / ¾in thick. Use a 5cm/2in cutter to stamp out rounds and place on a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.

5. Brush the tops of the scones with a little milk. Bake for 12-15 minutes until well risen and golden.

6. Cool on a wire rack and serve with butter and good jam and maybe some clotted cream.
